Goat cheese-stuffed chicken


I stole this idea from jZcool Eatery. For best results, assemble a few hours ahead so the cheese doesn't melt too quickly.

1 button fresh goat cheese
1/4 cup olives, chopped
zest of one fresh lemon or
one minced preserved lemon
1 pound boneless, skinless chicken thighs
olive oil
salt and pepper to taste

Mix one button of goat cheese with about olives and lemon. Place about 1 tablespoon of cheese mixture on each chicken thight and roll together. Tie chicken so that cheese is completely secured inside. Drizzle thighs with olive oil and sprinkle with salt and pepper. Refrigerate until ready to cook. Grill chicken thighs on each side until done.
