Zucchini chronicles: puff pastry to the rescue


Just brush pastry with olive oil, sprinkle with minced herbs, layer with thinly-sliced vegetables, and finally, dot with blobs of ricotta or goat cheese. I baked at 400 degrees for about half an hour. Alternatively, you can sprinkle the herbs on top but I like mine baked into the pastry.

Brilliant. I must try this the minute I get home. Heaven knows we have enough squash and to spare.
