Almost golden tofu

Tonight I tried this Melissa Clark recipe for crisp tofu with chorizo and shitake mushrooms.

The key, as she explains, is to cook the tofu in a non-stick pan. Alas, I do not have a non-stick pan. I tried my enamelware and the tofu did stick. Nevertheless, the dish overall is a winner even with warm-but-not-crisp tofu. And served over goth purple-black forbidden rice it's a very dark and dramatic dish. Wish you could see it. Sigh.
