Quatro y Cinco de Mayo

We had a dear friend visiting over the weekend, so we celebrated Cinco de Mayo a little early with a dinner on the roof Sunday evening. I made this sensational orange/vanilla chicken while the guys grilled asparagus and corn on the grill, served with chipotle mayonnaise. There were also fresh guacamole and margaritas.

On the real Cinco de Mayo I used the rest of the chicken (we bought more than would fit into a pan at once) to make margarita chicken: basically the same recipe as the orange/vanilla, only braised in lime juice and tequila, with some cilantro thrown in during the last 10 minutes.

Don't worry, Grandparents, Jasper did not partake. He had a bit of a tummy ache and just nibbled on goldfish crackers and milk. It all came back out later during two sick episodes in the middle of the night.

Those of you thinking about having children, just keep that in mind. In fact, try this! Set your alarm for 12:30. Go into the kitchen, puree your dinner leftovers, and pour them on a bed. Play a recording of a crying child while you run down three flights of stairs to the laundry. Place several hot water bottles next to you in bed (to simulate sick child now in bed with you) and set alarm for 2:30. Wake, sit up and down several times over the next half hour, and then pour remaining dinner leftovers in a strategically-placed bowl.

Poor Jasper, it was a rough night for him. He was doing much better today.

Poor Jasper...I'm sorry the tummy bug got him. Hopefully he'll be back to his silly self in no time!

I, too, am sorry Jasper was sick, but this made me spit out my coffee. Too funny.
