Laney's pancakes

I didn't cook much this weekend. We were busy enjoying the city, first with the Street Fair of the World Science Festival (which all three of us loved) on Saturday and then the Gowanus Goes Green Festival Sunday. The best thing I ate all weekend (next to the tasty empanadas from V-Spot and cookies from the Treats Truck at the Gowanus Festival) were Lane's buttermilk pancakes. It's about time I shared the recipe with you.

Lane's buttermilk pancakes

1 cup flour
1/2 teaspoon salt
2 teaspoons baking powder
3 tablespoons melted butter
1 egg
1 1/4-1 1/2 cups buttermilk

Combine ingredients and stir well (but don't fuss about it). Let sit a few minutes while batter bubbles. Cook on a warm cast-iron grill. Enjoy with good maple syrup, bacon, fruit, and a tall glass of milk.

By the way -- in case anyone in Brooklyn is reading this, the Gowanus Festival was held at The Yard, a charming industrial-garden setting along the banks of the Gowanus canal (no really, it's beautiful). This summer you can enjoy an all-ages outdoor jam at The Yard every Sunday with Sunday Best.
