CSA recipes: sesame green beans and onion jam

Remember last year, when I did that CSA article for Cookie Magazine Online, and I mentioned that they might be using my recipes? Well, they didn't have time to test them (that or they found the idea of carrot pudding too horrifying and were just saying that to be nice). So they're mine to publish!

First up, sesame green beans and onion jam. Not together, mind you, though if you wanted to start with onion jam on crusty bread and then move on to sesame green beans, that might be a good idea.

Sesame green beans

1 lb. green beans
1-2 T sesame oil
1 T toasted sesame seeds
salt and pepper to taste

Poach green beans until just tender. Combine with sesame oil, toasted sesame seeds, salt and pepper.

Toasting sesame seeds: If you toast your sesame seeds yourself, spread a thin layer on a griddle over medium-low heat and cover. Seeds will need just a couple of minutes to toast. Remove immediately from heat.

Onion jam

2 T butter
1 medium onion, thinly sliced (about 2 cups)
salt and pepper to taste
1 T fresh thyme
1 T brown sugar
1 T balsamic vinegar

Melt butter in a heavy pan. Stir onion in butter to coat and then stir in thyme. Cover and simmer on low for about 30 minutes, stirring occasionally). Add sugar and vinegar and cook, uncovered, for 15 minutes more. Store in glass jar if not using immediately. Will keep for a couple of weeks

Well, these look perfectly simple and tasty to me. I can't imagine why they wouldn't have printed them. Their loss, our gain!

I think I'll make some onion jam this weekend. Should go well with summer tapas!

Thanks Miss G. -- They were actually in the process of testing all of the Epicurious recipes, so I think they were just very busy. But I did catch a bit of gossip about another cookbook they featured once whose recipes were disastrous...
