Further enlightenment

Another vegan dinner from The Enlightened Kitchen!

This one was risky as Lane is not an eggplant fan. He hates that slimy texture it can get. I was careful to boil it until just soft and then drain it before adding the dressing (lemon juice, ume plum paste, olive oil, salt). I also added scallions as they always seem to go well with eggplant. Lane liked the dish.

Also, tofu sliced, marinated in soy sauce and mirin, and grilled with sesame seeds--my recipe.

And udon noodles with soy sauce, sesame oil, and toasted sesame seeds. This was all too easy for three dishes. I feel so Zen now.
