The Food Coop had smoked ham hock, and when I see ham hock I have a Pavlovian response: split pea soup. Since it's spring, though, I tried to add a lighter touch to the stew. I used yellow split peas instead of the usual green, and cooked them with the ham, some chopped leek and carrot, and thyme. I wanted the brightness of citrus without the tartness so I added two halves of a lemon. That did the trick--springy stew.
